Apple Pie French Toast

This one came about the same way most good desserts do. Leftover bread or Croissants
A cold morning. Something sweet without going over the top. Apple Pie Pop Dust was
sitting there, so I used it properly.
This is a baked French toast that eats like dessert but works just as well for brunch. Soft through the middle, golden on top, with warm apple spice running all the way through.
The Pop Dust does the heavy lifting here. It brings that apple pie flavour without needing stewed apples or extra sugar.
You prep it the night before or throw it together in the morning.
Bake it off. Spoon it out hot. Cream or ice cream if you want. No rules.

what you need
6 cups day-old brioche or thick sliced white bread, or croissants roughly torn
4 eggs
1½ cups milk
½ cup thickened cream
¼ cup brown sugar
2 tablespoons melted butter
3 tablespoons Smokey Joe’s Apple Pie Pop Dust
1 teaspoon vanilla extract
Pinch of salt
To finish (optional):
Extra Apple Pie Pop Dust
Icing sugar
Cream, custard or vanilla ice cream
what to do
Grease a medium baking dish and add the bread pieces, spreading them evenly.
In a bowl, whisk together eggs, milk, cream, brown sugar, melted butter, vanilla, salt and Apple Pie Pop Dust.
Pour the mixture evenly over the bread. Press gently so everything gets soaked.
Rest for 10 minutes, or cover and refrigerate overnight if prepping ahead.
Bake at 180°C for 40–45 minutes until golden on top and just set in the middle.
Rest for 5 minutes, then finish with a light dusting of Apple Pie Pop Dust.
Serve hot lots of maple syrup and top with cream or ice cream.
