Cedar Plank Salmon with Buttery Lemon Pepper

When I’ve got a bit more time and want something with real flavour, I cook salmon on a cedar plank. The wood gives off a gentle smoke that works beautifully with my buttery Lemon Pepper seasoning. You still get that rich, buttery finish, but with a bit of campfire character running through it. It’s an easy cook. Soak the plank, season the fish, and let the grill do the work. I do this when the family is coming over and I want something simple that looks like I spent more time on it than I actually did.

Prep time: 10 minutes
Cook time: 15 to 20 minutes
Plank soak time: 1 hour
What you need
4 salmon fillets, skin on
2 tablespoons Smokey Joe’s Buttery Lemon Pepper Seasoning
1 tablespoon olive oil
1 lemon, sliced
1 cedar plank, soaked in water for 1 hour
Fresh parsley, chopped (optional)
What to do
Soak the cedar plank in water for at least 1 hour.
Heat the grill to medium heat.
Pat the salmon dry.
Rub with olive oil, then coat evenly with Buttery Lemon Pepper Seasoning.
Lay the lemon slices on the soaked cedar plank and place the salmon on top.
Set the plank on the grill, lid down.
Cook for 15 to 20 minutes depending on thickness, until the salmon flakes easily.
Let it rest for a couple of minutes before serving.
Serving
So good with just a vibrant fresh salad. A squeeze of lemon on top sets it off.
Joe's Tip
Keep a spray bottle of water nearby. If the edges of the cedar plank start to catch, a quick spritz will settle it without cooling the BBQ down.
