Christmas Glaze

Sweet, tangy, with a bit of spice and depth. Think sticky, subtle citrus, and those warm festive flavours that just work with roast poultry or the Christmas ham. This glaze gives you that festive flavour without overcomplicating things.

What you need

  • ½ cup orange juice (fresh is best)

  • Zest of 1 orange

  • ¼ cup honey

  • 2 tbsp brown sugar

  • 2 tbsp Dijon or seeded mustard

  • 1 tbsp apple cider vinegar

  • 1 tbsp butter

  • 1 tsp Smokey Joe’s Apple Pie Seasoning 

  • 1 tsp Smokey Joe's Festive Seasoning

  • Pinch of salt

  • Optional: a splash of brandy or port


What to do

  • Add orange juice, zest, honey, brown sugar, mustard, vinegar, butter, seasoning and salt to a small saucepan.

  • Stir over medium heat until the sugar melts and it starts to bubble.

  • Let it simmer for 5–7 minutes until slightly thickened and glossy.

  • Add a splash of brandy or port if you’re using it, simmer another minute.

  • Brush onto your ham or  turkey in the last 30–40 minutes of roasting. 

  • Reapply every 10–15 minutes for a deep, sticky finish.
