Bacon Burnt Ends

Bacon Burnt Ends taste just as good as they sound. If there’s one way to make bacon better - I promise you, this is it. These are sticky little cubes of heaven.
An unsliced slab of bacon should be available from most good butchers. If your local doesn't have it, ask them to order it in - it's worth it for bacon burnt ends!
What you need
2kg unsliced bacon
1 1/2 cup light brown sugar
2 Tbsp Smokey Joe's Honey Hog Rub
1 ½ cups of your favourite sweet BBQ Sauce (I recommend our Smokey Joe's Sticky Raspberry Chipotle Sauce or Hot N Sour Pineapple Wing Sauce) )
What to do
Prepare Smoker or grill for indirect cooking at 120c or 250f. Add 2 chunks of cherry wood to hot coals for smoke flavour.
Cut Bacon into 1 1/2” (4cm) strips lengthwise. Cut each strip into 1 1/2” (4cm) cubes.
Combine the brown sugar and the Honey Hog Rub in a small bowl. Place the cubes of bacon in a large bowl and season with the rub & sugar mixture. Toss to coat evenly.
Lightly coat raised cooling rack with canola cooking spray and place bacon burnt end pieces on the rack. Use multiple racks if necessary.
Place the racks on the smoker and cook for 1 hour. Flip each burnt end piece over and continue to cook for 1 additional hour.
Remove the bacon burnt ends from the smoker and place each piece in a half size aluminium tray/pan.
Drizzle your favourite sauce over the top and gently toss to coat even.
Place the pan back on the smoker and glaze for 20-30 minutes. Remove the pan from the smoker and allow to cool slightly before eating, if you can wait.
