Butter Chicken

This one’s all about that rich, creamy curry sauce

with just the right hit of spice. Smokey Joe’s Bombay Bites brings in the flavour with a mix of warm spices like cumin, coriander, turmeric, and a little heat, all blended to give you that proper Indian-style base without the guesswork.

It’s a crowd-pleaser. Great with rice, naan, or just mopped up with some warm flatbread.


What You Need

For the chicken:

  • 800g boneless chicken thigh, cut into chunks

  • ¾ cup Greek yoghurt

  • 1 ½ tbsp Smokey Joe’s Bombay Bites

  • Juice of half a lemon


For the sauce:

  • 2 tbsp butter

  • 1 tbsp oil

  • 1 onion, finely chopped

  • 3 garlic cloves, minced

  • 1 tbsp grated ginger

  • 1 ½ tbsp Smokey Joe’s Bombay Bites

  • 2 tbsp tomato paste

  • 400g canned crushed tomatoes

  • ¾ cup thickened cream

  • Salt to taste

  • Extra butter (optional), to finish


What To Do

  1. Marinate the chicken: Mix chicken with yoghurt, Bombay Bites, lemon juice and salt. Let it sit for at least an hour, or overnight if you’ve got time.

  2. Cook the chicken: Heat a pan with a bit of oil over medium-high heat. Sear the chicken in batches until it’s got some colour. Doesn’t need to be cooked through — just set it aside once browned.

  3. Start the sauce: In the same pan, add butter and a bit more oil if needed. Cook the onion down until soft, about 5–7 minutes. Add garlic and ginger, cook for another minute.

  4. Build the flavour: Stir in tomato paste and Bombay Bites seasoning. Let it cook out for a minute or two.

  5. Add tomatoes: Pour in the crushed tomatoes, bring to a simmer, and let it cook down for 10 minutes to thicken up.

  6. Add cream: Lower the heat and stir in the cream. Add salt to taste. Let it simmer gently for 5 minutes.

  7. Finish the chicken: Add the seared chicken back into the sauce and simmer gently for 10–15 minutes, or until the chicken is tender and cooked through.

  8. Finish it off: Stir through a knob of butter at the end for extra richness, if you like.

  9. Serve: Ladle over steamed rice or scoop it up with naan or flatbread.

Bombay Bites packs plenty of flavour, so taste the sauce before adding extra salt or chilli. If you want it creamier, you can swap half the tomato for more cream — or stir in a spoon of yoghurt at the end. It’s one of those recipes you can tweak to suit how you like it
