What you need

Chicken

  • 4 chicken breast fillets, butterflied

  • ½ cup plain flour

  • 2 eggs, beaten

  • 1½ cups panko breadcrumbs

  • Vegetable oil, for shallow frying


Bombay Bites Curry Sauce

  • 2 tbsp butter

  • 1 onion, finely diced

  • 2 cloves garlic, crushed

  • 2 tbsp Smokey Joe's Bombay Bites

  • 2 tbsp plain flour

  • 500 ml chicken stock

  • 1 tbsp tomato paste

  • 1 tbsp honey

  • 1 tbsp soy sauce

  • 100 ml thickened cream (optional, for a creamier sauce)


To Serve

  • Steamed jasmine rice

  • Pickled ginger (optional)

  • Spring onions, sliced

  • Sesame seeds


What to do

  1. Coat the chicken in flour, then egg, then panko breadcrumbs.

  2. Shallow fry for 4–5 minutes per side until golden and cooked through. Drain on paper towel.

  3. For the curry sauce, melt the butter in a saucepan and cook the onion until soft. Add the garlic and cook for 1 minute.

  4. Stir in the Bombay Bites and flour, cooking for another minute.

  5. Gradually whisk in the chicken stock, then add the tomato paste, honey and soy sauce. Simmer for 10–15 minutes until thickened.

  6. Stir in the cream if using.

  7. Slice the chicken and serve over steamed rice. Generously spoon over the Bombay Bites curry sauce and garnish with spring onions and sesame seeds.


Smokey Joe's Tip

For extra crunch, spray the crumbed chicken with a little oil and cook it in the air fryer at 200°C for 15–18 minutes, turning halfway through.
