KOREAN BBQ CHICKEN

This isn't your traditional Korean bbq chicken but it sure was delicious! Chicken was marinated in an Asian style marinate for 8 hours, then seasoned with @smokeyjoesrubs Korean BBQ rub right before cooking. I used bone in, skin on chicken thighs for this recipe. Cooked indirect heat 356F/180 degrees C with @chargrilleraustralia lump on my double play with a little black cherry smoke rolling. Basted once or twice with a little of the marinate that I set aside before marinating the chicken. And finished off with fresh chives, chilli and sprinkle of sesame seeds and served up with steamed jasmine rice with soy, hot honey and sesame sauce. Asian Style Marinate Recipe 3 tablespoons soy sauce 3 tablespoons hoisin sauce 2 tablespoons Honey 1/2 cup tomato ketchup 1 tablespoon brown sugar 2 teaspoons white rice vinegar 3 cloves garlic, crushed 1 tablespoon freshly grated ginger 2 teaspoons sesame oil 1/2 Chinese five spice Mix all ingredients together, set 1/3 cup aside for basting and marinate chicken for a minimum of 2 hours. Sprinkle with Korean bbq rub right before cooking! Have you ever tried using a wet marinate and a dry rub? I just love layering up those flavours to get the taste buds tingling.
