Outback BBQ Lamb Cutlets

what you need

  • 8 lamb cutlets (French-trimmed if you want them fancy)

  • 2 tbsp olive oil

  • 1½ tbsp Smokey Joe’s Outback Seasoning

  • Squeeze of lemon (to finish)


what to do

  1. Prep the lamb: Pat the cutlets dry and place them in a bowl or tray. Drizzle with olive oil and toss well to coat.

  2. Season generously: Sprinkle over the Outback seasoning and press it in with your hands. Make sure both sides are well coated. Let them sit for 10–15 mins while the BBQ heats up.

  3. Fire up the grill: Preheat your BBQ to high heat. You want it nice and hot to get a good sear.

  4. Grill the cutlets:Place the cutlets on the grill. Cook for 2–3 mins per side for medium rare, depending on thickness. Get a bit of char going — that’s where the flavour lives.

  5. Rest and serve: Take them off the heat and rest for 5 mins. Squeeze over some fresh lemon just before serving.


These go well with a side of grilled veg, a simple salad, or even just straight off the bone with a cold drink. You’ll know they’re good when the bone’s clean and the plate’s empty.
