Greek Souvlaki

The Greek souvlaki is cherished for its mouthwatering flavors, simplicity, and versatility. It hasbecome an iconic and much-loved dish, both in Greece as the original fast food and around the world. Nothing beats the flavour of meat cooked over charcoal and wrapped in soft pita bread


Ingredients:

For the marinade:

  • 700g boneless lamb, pork or chicken (sliced thin)

  • 3 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 2 tablespoons Smokey Joe's Souvlaki Seasoning

  • 3 cloves garlic, minced

  • Salt and pepper to taste

For the Tzatziki sauce:

  • 1 cup Greek yogurt

  • 1/2 cucumber, grated and squeezed to remove excess liquid

  • 2 cloves garlic, minced

  • 1 tablespoon lemon juice

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon chopped fresh dill (optional)

  • Salt and pepper to taste

For assembling:

  • Pita bread or flatbread

  • Sliced tomatoes

  • Sliced onions

  • Sliced cucumbers

  • Lettuce or shredded cabbage

Instructions:

  1. In a bowl, combine the olive oil, lemon juice, Smokey Joe's Souvlaki Seasoning, minced garlic, salt, and pepper. Mix well to create the marinade.

  2. Add the lamb to the marinade and toss to coat it evenly. Cover the bowl and let the meat marinate in the refrigerator for at least 1 hour, or preferably a couple of hours for more intense flavor.

  3. While the meat is marinating, prepare the tzatziki sauce. In another bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, chopped dill (if using), salt, and pepper. Stir well to combine. Adjust the seasoning according to your taste. Refrigerate the tzatziki sauce until ready to use.

  4. Preheat your grill or a skillet over medium-high heat. Cook the marinated meat until it is cooked through and nicely charred, usually about 4-6 minutes per side, depending on the thickness of the slices. Remove the cooked meat from the heat and let it rest for a few minutes.

  5. Warm the pita bread or flatbread in the oven or on the grill for a minute or so.

  6. To assemble the souvlaki, spread a generous amount of tzatziki sauce on the warmed pita bread. Add a portion of the cooked meat, followed by sliced tomatoes, onions, cucumbers, and lettuce or shredded cabbage.

  7. Fold the pita bread to enclose the filling, and if desired, wrap it in parchment or aluminum foil to hold it together.

  8. Repeat the process for the remaining pita bread and filling ingredients.

For something traditional place fries inside the souvlaki rather than on the side.
