Poco Loco Lamb Ribs

If you like your ribs tender, juicy, and full of flavour, this one's worth cooking.
These lamb ribs get a good coating of Smokey Joe’s Poco Loco rub. It’s smoky with a bit of spice and works perfectly with the richness of the lamb. Into the smoker they go, low and slow, with a spritz of apple cider vinegar and water to keep them moist and add a bit of tang.
You don’t need to rest them. No slicing either. Just pick one up and get into it. The meat should pull away easy and leave you licking your fingers clean.
Good food. No fuss. Always a crowd-pleaser at mine.

What you need
3 x racks lamb ribs, roughly 500gr (1lb) each
5-6 Tbsp Smokey Joe's Poco Loco rub
1 cup water
1/4 cup apple cider vinegar
What to do
Preheat a smoker to 135c (275f)
If necessary, pat the ribs dry with a paper towel to remove excess moisture. This also makes them more tacky so the seasoning will stick better.
Season the racks well on both sides with Smokey Joe's Poco Loco rub seasoning, massing the rub well into the flesh.
Lay the racks bone side down in the smoker.
In a spray bottle, combine the water with the apple cider vinegar. Spritz the racks every 30 minutes or so as they cook.
There is no internal temperature to cook to; rather, you have to cook these racks to feel. When they are ready, they should be easily probe with no resistance (meaning, you can stick a skewer or thermometer into any part of the rib meat and have it easily push thought).
This should take about 3 hours.
These ribs won't need resting, as they are so thin, so you can eat as soon as they are ready, just pick up and eat.
