Lamb Shanks are melt in your mouth delicious when you cook and treat them right.
These Shanks I picked up from @bullybutcher and @the_qualified_meat_packer
Seasoned with Greek Souvlaki Rub @smokeyjoesrubs and cooked low n slow with pecan smoke rolling over them in the @chargrilleraustralia double play. I opted not to braise shanks but cooked a delicious pot of smokey tuscan style stew to serve the shanks up with.
The tuscan stew was a blend of
1 onion diced
3 sticks of celery, chopped
1 small eggplant, cubed
1 carrot, chopped ,
1 red capsicum, sliced
1L beef stock
1 cup red wine
400g tin tomatoes
2 tablespoons tomato paste
1 tablespoon balsamic vinegar @stickybalsamic
4 cloves garlic, crushed
@smokeyjoesrubs tuscan herbs.
Salt & pepper to season
All placed in my dutch oven and cooked in bbq.
Don't have a bbq, simply brown shanks in a fry pan and add all ingredients to your slow cooker or casserole dish can cook at 140 degrees for 6 hours.
