These honey glazed baby carrots are so simple to make, only need a few ingredients, and come out tasting like you’ve put in way more effort than you have. The Smokey Joe’s Bee Sting seasoning brings that sweet-spicy balance — not too hot, just enough to give the honey a bit of attitude. I usually roast them while the main’s on the grill, and they’re always the first thing to go. Even the grandkids grab them straight off the tray. Great with roast chicken, lamb chops or alongside a smoked pork shoulder. Honest food, done right.

what you need

  • 500g baby carrots, peeled and trimmed (leave a bit of green on if they’re fresh)

  • 2 tbsp olive oil

  • 1 tbsp honey

  • 1½ tsp Smokey Joe’s Bee Sting seasoning (more if you like it punchy)

  • Pinch of salt (optional, depending on taste)

what to do

  1. Preheat your BBQ or oven to 190°c

  2. Toss the carrots in a bowl with olive oil, Bee Sting seasoning and honey. Get everything coated well.

  3. Lay them out on a lined baking tray in a single layer. Don’t crowd them or they’ll steam instead of roast.

  4. Roast for 25–30 minutes, giving them a shake halfway through. You want them soft inside, caramelised on the outside.

  5. Check for seasoning, hit with a little extra Bee Sting or a sprinkle of salt if needed.

Serve hot with roast chook, grilled lamb, or as part of a BBQ spread. They’re sweet, sticky, and just a little spicy — proper good.
