Lemon Pepper Corn Fritters

These corn fritters are perfect as a side dish, appetizer, or even a light meal. The Smokey Joe’s Lemon Pepper Seasoning which adds a delightful buttery, citrus and Peppery note that pairs wonderfully with the sweet corn.
What you need
2 cups corn kernels (fresh, canned, or thawed frozen)
1 cup self-raising flour
2 large eggs
½ cup milk
2 spring onions, finely sliced
½ cup grated cheddar cheese (optional for extra richness)
Oil for frying
What to do
Prepare the Batter:
In a large bowl, combine the flour, eggs, and milk. Whisk until smooth.
Stir in the corn kernels, spring onions, Smokey Joe’s Lemon Pepper Seasoning, and cheddar cheese if using. Mix well.
Heat a generous amount of oil in a frying pan over medium heat.
Spoon heaped tablespoons of the batter into the pan, flattening them slightly with the back of the spoon. Cook for 2-3 minutes on each side or until golden brown and cooked through.
Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
Serve warm with a dollop of sour cream, a squeeze of lemon juice, or your favorite dipping sauce.
Joe’s Tip - if using fresh corn why not char the corn on the BBQ first for a smokey version.
