Bombay Chicken Curry

If you’re after a tasty, no-fuss curry that brings big flavour, this Bombay Chicken Curry is for you. Using Smokey Joe’s Bombay Bites, you’ll have everything you need to whip up a rich, aromatic dish in just 30 minutes. Tender chicken simmered in a fragrant sauce—perfect for a quick weeknight meal or something to impress when you've got guests over. Trust me, once you try it, you’ll be making it again and again.


Ingredients:

  • 500g chicken thighs cut into bite size pieces

  • 1 large onion, chopped

  • 4 cloves of garlic, minced

  • 2 medium sized tomatoes, chopped

  • 1 cup of mixed vegetables - carrots, cauliflower, potatoes

  • 1 can of chickpeas, drained and rinsed (optional)

  • 2 Tbsp of Smokey Joe's Bombay Bites Mix

  • 1 tsp of salt

  • 1/2 tsp of sugar

  • 1 cup of water

  • 1/2 cup of heavy cream or coconut milk

  • Fresh coriander leaves and sliced chilli for garnish

  • Rice or naan bread, to serve


Instructions:

  1. Heat oil in a large saucepan over medium heat.

  2. Add the chopped onions and minced garlic and cook until the onions are soft and translucent.

  3. Add the chicken and cook for 5 minutes

  4. Stir in the chopped tomatoes and cook until they become soft and mushy.

  5. Add the vegetables, chickpeas, Smokey Joe's Bombay Spice Mix, salt, and sugar. Cook for 2-3 minutes until the vegetables are coated in the spices.

  6. Pour in the water and let the curry simmer for 10-15 minutes, or until the vegetables are tender and the sauce has thickened.

  7. Stir in the heavy cream or coconut milk and cook for another 2-3 minutes until the sauce has become creamy.

  8. Serve the curry hot with rice or naan bread, garnished with fresh cilantro leaves. Enjoy!
