Using Smokey Joe’s Bombay Bites, you’ll have everything you need to whip up a rich, aromatic dish in just 30 minutes. Tender chicken simmered in a fragrant sauce—perfect for a quick weeknight meal or something to impress when you've got guests over. Trust me, once you try it, you’ll be making it again and again.

Ingredients:
500g chicken thighs cut into bite size pieces
1 large onion, chopped
4 cloves of garlic, minced
2 medium sized tomatoes, chopped
1 cup of mixed vegetables - carrots, cauliflower, potatoes
1 can of chickpeas, drained and rinsed (optional)
2 Tbsp of Smokey Joe's Bombay Bites Mix
1 tsp of salt
1/2 tsp of sugar
1 cup of water
1/2 cup of heavy cream or coconut milk
Fresh coriander leaves and sliced chilli for garnish
Rice or naan bread, to serve
Instructions:
Heat oil in a large saucepan over medium heat.
Add the chopped onions and minced garlic and cook until the onions are soft and translucent.
Add the chicken and cook for 5 minutes
Stir in the chopped tomatoes and cook until they become soft and mushy.
Add the vegetables, chickpeas, Smokey Joe's Bombay Spice Mix, salt, and sugar. Cook for 2-3 minutes until the vegetables are coated in the spices.
Pour in the water and let the curry simmer for 10-15 minutes, or until the vegetables are tender and the sauce has thickened.
Stir in the heavy cream or coconut milk and cook for another 2-3 minutes until the sauce has become creamy.
Serve the curry hot with rice or naan bread, garnished with fresh cilantro leaves. Enjoy!
