what you need

Chicken breast cut into 2 cm cubes
Flour, for crumbing
2 eggs
2 cups (250ml) milk
2 cups panko crumbs
6 Tbsp Smokey Joe's Lemon Pepper seasoning
Vegetable oil, for frying
What to do
Heat the oil to 180°C.
In one bowl, whisk together flour and half of the lemon pepper seasoning.
In a second bowl, whisk eggs and milk.
In a third bowl, combine Panko breadcrumbs and the remaining lemon pepper seasoning.
First, coat chicken in the flour mixture, then dip them in the egg mixture.
Finally, coat with the lemon pepper Panko crumbs.
Fry chicken for 2-3 minutes (depending on size) until golden and crispy.
Use a metal slotted spoon to remove and transfer to a plate lined with paper towels.
Perfect served with a spiced or lemon aioli.
These are also perfect for cooking in an air fryer, and you can easily swap them for prawns!
