I have posted this recipe before but thought I'd share it again as I've had messages asking for my recipe after I posted the @chargrilleraustralia dry rubs a few days ago and I said that I also love to use salt and pepper with a homemade chimichurri on a good steak.
Here's the thing with Chimichurri, you can make it as hot or as mild as you like it. Personally I don't like the taste of chimichurri on it's own but add it to steak and it transforms into something delicious and utterly mouthwatering. Trust me, it's good 🤤
Just adjust the chilli quantity to suit your taste, I add 2 inferno chilli's with the seeds because I love chilli but feel free to deseed the chilli's or just add one chilli.

1/2 cup good quality olive oil
2 tablespoons red wine vinegar
1 cup finely chopped parsley
2 - 3 cloves garlic , finely chopped
1- 2 red chilli's (I add the seeds but the chilli can be deseeded)
1/2 teaspoon dried oregano
1 large pinch of salt
Pepper to Taste
