Holy Guacamole

Sometimes the simplest things are the best, and guacamole is a perfect example. Just ripe avocados, a few fresh ingredients, and a bit of seasoning - no need to overthink it.
I’ve made this one more times than I can count, whether it’s for taco night, a BBQ, or just something to scoop up with corn chips and a cold beer. It’s fresh, creamy, and gets better the longer it sits (if it lasts that long). You can mash it chunky or smooth it right out, add more chilli if that’s your thing, or keep it mild.
What you need
4 Ripe Avocados
½ small red onion, finely diced
2 Roma tomatoes, diced
1 Jalapeno chopped – remove ribs and seeds for less heat
1 clove garlic, minced
1 Tbsp of chopped coriander (cilantro)
1 Lime, juiced, plus the zest
2 tsp of Smokey Joes Poco Loco Rub (or season to taste)
What to do
Cut avocados in half and remove pit.
Use a large spoon to remove the avocado meat from the shell.
Mash the avocado meat with a fork (to desired chunkiness).
Add Onion, Tomatoes, Garlic, Cilantro, Lime Zest, poco loco rub (season to taste) and mix well.
Put in Refrigerator or enjoy immediately as a dip or whack in a taco or burger. The uses are endless...
