Smokey Joe’s Poco Loco Slaw

This coleslaw is crunchy, fresh, and has a little kick thanks to my Poco Loco seasoning. Perfect with anything grilled or smoked, especially tacos, burgers, or pulled pork.
The seasoning adds just enough heat and depth to cut through rich meats without overpowering the whole plate. I like to dress it with a bit of mayo, lime and vinegar, so it’s creamy but still has some bite to it.
What you need
1/2 head Green Cabbage, shredded
1/2 head Purple Cabbage, shredded
1 small red onion, sliced thin
1 Jalapeño, deseeded and chopped
1 Whole Lime, zest & juice
1 cup fresh coriander
1 cup whole egg mayonnaise
2 Tbsp vinegar
What to do
Combine green & purple shredded cabbage, onion, jalapeno & fresh coriander .
Add the lime juice, zest and season with poco loco seasoning.
Add mayonnaise & vinegar, mix well to combine.
great with tacos or on a pulled pork burger
